Pralined yule log
Ingredients :
For the biscuit : 6 eggs, 0,44lb of caster sugar, 0,2lb of
flour, 0,2lb of potato flour.
For the cream : 3 eggs yellows, 0,66lb of butter, 1,6 cup
of sugar syrup, 0,22lb of pralined paste.
For the biscuit : Preheat your oven
at 392°.
Mix 6 egg yellows with half of sugar. Beat the egg whites
until stiff peaks form, then incorporate gradually the remainder
of sucre.
Sieve the flour. Incorporate slowly with the œufs and
mix delicately. Pour the mixture on a greaseproof paper buttered
posed on the plate of the oven. Cooking 15mn.
Put the biscuit on a wet cloth and
roll immediately so that the biscuit takes the form without
breaking. Let it cool.
For the cream : Incorporate sugar
syrup in the 3 egg yellows while whipping vigorously, to add
butter in piece and whip and pralined paste.
Unroll delicately the biscuit, and
spread with the cream and to roll biscuit carefully. Cover
with cream, and make stripes with a fork.
Reserve the yule log in the fridge
at least 1 hour.
