The traditional cocktail snack
of the french west indies which accompanies the ti' punch
Ingrédients : 0,55lb of cod,
0,55lb of flour, the juice of a lemon, 2 cloves of garlic,
1 onion, some hot pepper according to your taste, 2 eggs,
some bits of parsley, 1 dessertspoon of dried thyme, 1 small
milk glass, oil, 1 bay leaf, and black pepper.
Make desalinate the cod during 24
hours by changing the water regularly.
Put the cod in a pan of boiling water
with the bay leaf, and continue cooking during 10 minutes.
Remove the skin and bones.
Mix the flour with milk, and the eggs.
Let rest one hour.
Mix cod with peeled onion, hot pepper,
peeled garlic, lemon juice, parsley, thyme, and a little of
pepper.
Mix well cod with the paste.
Put small balls of paste in boiling
oil, until there are well gilded and inflated. Deposit them
on absorbing paper.
